The Fall Challenge created by Neely and Amber is almost over which is too bad because I have really enjoyed it.
Anyways....Day 7: Fall Recipes
I love a Pumpkin recipe, so here are two of my favorites....
1) Pumpkin Scones. Gals (and guys?), these are so darn easy to make! This is my go-to scone recipe so for Fall I spice it up with canned pumpkin and pumpkin pie spice. Instead of the 1/2 cup of sour cream I use 1/2 cup of pumpkin and I throw in a couple tablespoons of pumpkin pie spice. Sorry, I don't measure the spice amount, I just add it in until it smells and looks right (a slight tint to the flour mixture and the hint of cinnamon in the air). You won't regret making these, my friends and family love them.
2) Pumpkin Bread. I just made this this weekend but again it was so quick and easy (you just throw everything into a bowl and mix it all up!) and very tasty. Be for warned though that this makes A TON of batter, I was able to fill up 4 mini loaves and half of a regular size bread load. Also, I used 1/2 cup of oil and a 1/2 cup of applesauce instead of a whole cup of oil which it calls for. And again, I just threw in some pumpkin pie spice instead of the individual amounts of cinnamon and nutmeg. Enjoy!
