Friday night I made another recipe from Giada's Everday Pasta:
Tortellini Soup with Pancetta and Swiss Chard
So tasty! Easy prep work and not much other work involved since you combine all the ingredients into on big soup pot and let it simmer for 20-30 mins. *It took longer than I originally thought because it took about 15 minutes for the soup to come to a boil before I could add the frozen tortellini....minor issue though. Perfect soup for a Winter night and just as delicious the next day.
Sunday night I made: Farfalle with Broccoli
I LOVED this. It is incredibly quick to make (and since no one in my family is an anchovy fan we skipped the anchovy paste...) but still light and enjoyable. Also we didn't have farfalle on hand so I used rotini and it was perfect. The pasta becomes infused with the broccoli taste when they both cook together and it is amazing plus the little kick of red pepper flakes is great. A simple combo of pasta and fresh broccoli; and it makes me feel (slightly) healthier after eating it :)
